Daisy’s Pancakes!

Try some Iron Age treats this Pancake Day with some berries, cream and honey!

Daisy’s ‘Peng’ Pancakes
Daisy has whipped up a batch of pancakes for Pancake Day, using Iron Age ingredients – try it at home and send your photos to us at info@crannog.co.uk!

Ingredients:
1 ½ wooden cups of flour – we used white spelt flour
1 wooden tablespoon of honey
1 sprinkle of salt
1 large duck egg – beaten
1 ¼ cups of milk
3 tablespoons melted butter
Oil for the pan
Double cream
Fresh berries
Runny honey to drizzle sensuously in slo motion…

Instructions:
Heat pan over fire (or hob).
In a large bowl whisk flour and salt, then add the honey, egg, milk and melted butter, whisking from the centre to create a thick batter. Rest for ten mins.
While resting, whip the double cream with an iron age spruce whisk (or an electric one) and add a spoonful of berries.
Add the oil to a medium hot pan, then ladle a spoonful of mixture onto the pan. When it starts to brown, flip over to cook the other side.
To plate, layer pancakes with cream and berries and finish with a drizzle of honey!
