The Crannog Honey Loaf
We often make our delicious Crannog Honey Loaf to hand out to friends old and new both at the Centre and when we’re out and about at Outreach … we’re always asked for the recipe so here it is!
CRANNOG HONEY WHEAT LOAF
150g Runny Honey
225ml Plain Yoghurt
2 eggs lightly beaten
320g Spelt Wheat Flour
15g Baking Powder
Preheat oven to 325°F
Combine the honey and yoghurt in a saucepan over a gentle heat and stir until blended.
Cut the butter into cubes and add to the mixture to melt.
Remove pan from heat and allow to cool slightly before adding the beaten eggs.
In a separate bowl, mix flour with baking powder, add the honey, yoghurt and butter mix and blend thoroughly.
If making 2 small loaves, divide mixture into 2 and pour mixture into greased and floured baking tins.
Bake for approximately 40 minutes, longer for 1 loaf, or until a skewer test is clean.
Be careful not to overbake.
Allow cooling for 15 minutes before turning out onto a wire rack.
* Some concessions have to be made for modern cooking but for a more authentic Iron Age style cake, leave out the baking powder and use duck eggs instead of hens eggs!
